ALCE NERO OLIO EXTRA VERGINE DI OLIVA DOP TERRA DI BARI BITONTO Olio Extra Vergine di Oliva DOP Terra di Bari Bitonto is produced exclusively with a blend of Cima di Bitonto and Coratina cultivars grown in the Murgia Barese in compliance with the DOP specification Green color with yellow reflections, fruity aroma medium, medium bitter and spicy taste, with a hint of fresh herbs and almond, it is an important and full-bodied oil, ideal for cereal soups, meat dishes, grilled vegetables, bresaola, caprese and bruschetta. The olives with which we produce the extra virgin olive oil DOP Terra di Bari Bitonto Alce Nero come from about 40,000 centenary olive trees of the Bari ogliarola (or Cima di Bitonto) and Coratina cultivar grown on about 250 hectares by 10 olive growers located exclusively in Puglia, between Bari and Bitonto. As required by the organic regulation, no chemical treatment is used and fertilizers are only of organic origin, thus avoiding impoverishing the soil and polluting the aquifers. The land is in fact fertilized with organic fertilizers and through the practice of green manuring: burying the field bean grown in the olive grove. The olives are harvested between October and January, when they have reached the right degree of ripeness; it is then that the fruit offers the best organoleptic qualities allowing to obtain fruity to intense or medium oils (according to the different vintages). The olives are transformed into oil within 48 hours of harvesting. The olives are processed cold (at a temperature never higher than 27 ° C). The low processing temperatures allow to preserve the typical taste, smells and flavors of the fruit. NET CONTENT: 750 ml
