Food specialty based on organic Khorasan wheat flour
With organic khorasan wheat grown in Italy. Khorasan wheat is a delicate cereal that needs fertile soils and a warm climate to express satisfactory growth, otherwise the crops are generally small. It has always been cultivated in the Mediterranean area, especially in North Africa, Spain and Italy. The cultivation areas where it today best expresses its characteristics are, in Italy, in particular in the regions of Sicily and Puglia. For our khorasan wheat penne rigate, we only use wheat grown in Italy.
Alce Nero organic khorasan wheat penne rigate are produced by a process that lasts 3-4 days. The slowness of processing is the secret to obtaining a more resistant pasta that keeps cooking better. The dough is passed through bronze dies which, in addition to giving them a rough surface, determine their shape. The drying takes place in the static cells where the traditional process is reproduced: the pens are dried at low temperatures, below 50 ° C, for a period of about 50 hours.
