Soba Giapponese Biologica means "buckwheat" is a noodle that is one of the most popular foods in Japan. Gluten free, fast cooking, excellent both in broth and dry, hot or cold.
Our Soba was born in Japan in 1934 when the founding engineer of the manufacturing company designed and built a mill dedicated to the grinding of buckwheat. The secret is in the special grain size of the flour that allows you to produce 100% buckwheat-based soba.
DIRECTIONS: bring plenty of water to a boil in a large pot. Cook the soba for 5-6 minutes, stirring occasionally. Turn off the heat and let it rest in the covered pot for 2 minutes. Drain and rinse gently in a pot of cold water. Tip: Change the rinse water a couple of times to maintain the savory taste of the buckwheat.
